Cacao Crepe with Banana and Nut butter

INGREDIENTS:

Crepe:

1/4 cup flour

1 egg

1 tsp cacao

1/4 cup Almond milk

1 tsp coconut oil

9″ frying pan

Toppings:

1 Banana (or any fruit, strawberries, blueberries, etc.)

1 tbsp nutbutter (any kind, peanut, almond, cashew, etc.)

DIRECTIONS:

– Mix almond milk, egg, flour & cacao by shaking it up in a mason jar or putting it in a blender, it should be pretty well mixed, and might look a but more watery than you’d think, if it’s not, add more almond milk. This is a crepe, not a pancake, so it’s all good.

– heat coconut oil on medium in frying pan (i prefer a well seasoned cast iron pan)

– when pan is hot and oil has covered the whole surface, slowly pour the crepe mix, start in the middle of the pan and pour it in a circle slowly expanding, this much mix should cover the bottom of a 9″ pan

– cook one side, flip when it’s solid enough, the edges will start to curl up a bit

– cook the other side, it’s done when it stops sticking to the pan when you shake it around

– top with nutbutter and banana
